Considered the true identity and philosophy of the estate. The grapes undergo a meticulous double selection process in the vineyard before being hand-harvested in late September. The bunches are then dried for approximately 40 days (appassimento). The wine is slowly aged for 24 months, mainly in French oak barrels, followed by at least 12 months of bottle maturation.
Style: Round, deep, and enveloping in profile. It coats the mouth with great elegance, delivering sophisticated aromas of warm spices and rich cherry jam.
Pairings: An ideal match for grilled red meats, traditional Italian sausages, and a wide selection of mature cheeses. Perfectly suited for contemporary Italian trattorias, high-end bistros, and wine bars seeking a rich, smooth, and authentic Valpolicella with a strong gastronomic character.

Corte Canella is a family estate in Illasi, within the Valpolicella zone of the Veneto. The domaine practices traditional appassimento — drying harvested grapes on trays to concentrate flavour and structure — across its range of Valpolicella wines. The Amarone della Valpolicella undergoes approximately 90 days of drying before a slow fermentation, then ages 24 months in first-pass oak barriques followed by a further 36 months in bottle. The Soave Il 56 is a tribute cuvée named in honour of grandfather Giuseppe: a portion of the Garganega and Trebbiano grapes undergo a shorter 10-day appassimento before a unified crush with the remainder of the harvest.
