Crafted as a tribute to grandfather Giuseppe. A portion of the grapes undergoes a 10-day drying process on trays (appassimento), while the remainder matures on the vine until a unified crush. The must experiences cold maceration at 5°C for 5 to 7 days before finishing its path in stainless steel tanks until spring bottling.
Style: Mineral and crisp in profile, delivering intense aromas of fresh citrus and straw-yellow depth, balanced by a highly persistent and savory flavor backbone. (Residual sugar: 2.8 g/l).
Pairings: Perfect as a summer aperitif, and an excellent match for premium seafood dinners, light pasta dishes, or casual weekend gatherings. Exceptionally well-suited for Italian restaurants and wine programs highlighting authentic northern Italian traditions.

Corte Canella is a family estate in Illasi, within the Valpolicella zone of the Veneto. The domaine practices traditional appassimento — drying harvested grapes on trays to concentrate flavour and structure — across its range of Valpolicella wines. The Amarone della Valpolicella undergoes approximately 90 days of drying before a slow fermentation, then ages 24 months in first-pass oak barriques followed by a further 36 months in bottle. The Soave Il 56 is a tribute cuvée named in honour of grandfather Giuseppe: a portion of the Garganega and Trebbiano grapes undergo a shorter 10-day appassimento before a unified crush with the remainder of the harvest.
