Sourced from highly selective vineyard operations including precise spring sprouting, manual defoliation, and careful bunch selection. The hand-picked grapes undergo a traditional drying process on trays (appassimento) for approximately 90 days. The wine is then aged for 24 months in first-pass oak barriques, followed by an additional 36 months of bottle maturation to complete its refining process.
Style: Romantic, warm, and deeply enveloping in profile. It stands out for its extreme roundness, impressive structural density, and bold persistence, combining intense notes of cherry in spirit with sweet spices. (Residual sugar: 2.9 g/l).
Pairings: With braised meats, rich roasts, wild game, as well as spicy or aged cheeses. It also makes a highly distinctive pairing with premium dark chocolate. A magnificent addition to fine-dining Italian restaurants and high-end steakhouse wine programs looking for a powerful, meditative red.

Corte Canella is a family estate in Illasi, within the Valpolicella zone of the Veneto. The domaine practices traditional appassimento — drying harvested grapes on trays to concentrate flavour and structure — across its range of Valpolicella wines. The Amarone della Valpolicella undergoes approximately 90 days of drying before a slow fermentation, then ages 24 months in first-pass oak barriques followed by a further 36 months in bottle. The Soave Il 56 is a tribute cuvée named in honour of grandfather Giuseppe: a portion of the Garganega and Trebbiano grapes undergo a shorter 10-day appassimento before a unified crush with the remainder of the harvest.
